I haven’t blogged about anything I’ve baked in a while! Since it’s fall, I decided it’s time to whip up some pumpkin themed goodies! I’ve actually never made anything with pumpkin before so this was my first time! I had some carrot cake mix at home and I came across a super easy recipe for Pumpkin Dump Cake to try.
I have no idea where people get the 15oz cans of pumpkin puree. The cans I found were huge and around 750ml? I just saved the rest and put it in the fridge. I actually halved the recipe since my family is not big on baked goods and I’ll end up eating everything myself!
All you have to do is combine pumpkin puree, sugar, eggs, evaporated milk and pumpkin spice in a bowl and dump it in a pan.
Then you sprinkle your cake mix on top evenly and add toppings like nuts and chocolate chips!
Then it’s time to pour on some melted butter over everything and bake!
Tada! It was super easy and the hardest part was waiting for it to bake!
Okay I know it doesn’t look attractive but it was so good! Very moist soft texture and you get the crunch from the walnuts and some sweetness from the chocolate chips! I had some trouble scooping it out of the pan since it was so soft. Definitely making this again with all the leftover pumpkin puree I have.
