Sharing another lazy girl recipe from Sally’s Baking Addiction! My parents recently bought some almond butter and we’ve actually never tried it before. I don’t think I like it as much as peanut butter or maybe it was just the brand we bought? It’s the Kirkland brand from Costco. It just wasn’t as smooth as the peanut butter we have. However, I realized that the almond butter could be turned into cookies! Specifically, flourless almond butter chocolate chip cookies.
All you need for this recipe is egg, almond butter, brown sugar, baking soda and chocolate chips. You can mix everything together in 1 bowl and no equipment is required! I like my cookies really soft and these were perfect! They also tasted good several days later. Probably because they’re full of butter haha I baked mine for about 8 mins because they looked pretty small. I think another minute or two wouldn’t have hurt though, it’d just be a bit crunchier.
So if you have any extra nut butter lying around, try turning it into cookies!
PS. the almond butter I got needs to be refrigerated. We did not know that for a few days! Oops!
